Dark chocolate is often vegan, but not always. Pure dark chocolate is cocoa mass, cocoa butter and sugar. Some brands add milk fat, butter oil, milk powder or whey, even to bars labelled 'dark', and Cadbury Bournville lists skimmed milk powder.
Cocoa butter is plant-based: it's the fat from the cocoa bean, not dairy butter.
Dark chocolate is one of the great vegan treats, and a lot of it is dairy-free by default. But "dark" isn't a legal guarantee of no milk. Some bars quietly add milk fat or milk powder for a smoother, rounder taste, so it's worth a ten-second check of the label.
What's in pure dark chocolate
At its simplest, dark chocolate is three ingredients, all plant-based:
| Ingredient | Status | What it is |
|---|---|---|
| Cocoa mass (cocoa liquor, chocolate) | Vegan | Ground roasted cocoa beans. |
| Cocoa butter | Vegan | The natural fat from cocoa beans. Not dairy. |
| Sugar | Grey area | In the US, cane sugar may be filtered with bone char. |
| Soy or sunflower lecithin | Vegan | An emulsifier, often added. |
| Vanilla or vanillin | Vegan | Flavoring. |
The milk ingredients that hide in "dark" chocolate
If you see any of these, the bar isn't vegan:
- Milk fat or butterfat (anhydrous milk fat)
- Butter oil or butter
- Milk powder, skimmed milk powder, whole milk powder or milk solids
- Whey or whey powder
- Lactose
- Cream or cream powder
- Casein or caseinate
These are most common in cheaper "dark" chocolate, in dark chocolate with fillings (caramel, toffee, praline) and in "dark milk" chocolate, which is milk chocolate with more cocoa.
Does a higher percentage mean vegan?
It helps, but it isn't a rule. The higher the cocoa percentage, the less room there is for other ingredients, so 70%+ bars are more often dairy-free. But some premium bars still use milk fat: Lindt's 78% bar, for example, includes it. Read the ingredients, not just the front of the pack.
"May contain milk" on dark chocolate
Almost all dark chocolate is made on the same lines as milk chocolate, so most bars carry a "may contain milk" warning. That's a cross-contact allergy warning, not an ingredient. Most vegans eat these bars. If you have a milk allergy, look for chocolate made in a dairy-free facility.

Cocoa powder and baking chocolate
Plain unsweetened cocoa powder is vegan, and so is most unsweetened baking chocolate (100% cocoa). Semi-sweet chocolate chips are often vegan but sometimes contain milk fat, so check the bag. Hot chocolate mixes usually contain milk powder.
The bottom line
Dark chocolate is often vegan, but check for milk fat, butter oil, milk powder and whey. Cocoa butter is fine. And don't assume Bournville, or any bar with a filling, is dairy-free.
