Pomegranate Yogurt Parfait

A good pomegranate turns a plain bowl of yogurt and granola into something that looks like a celebration. The seeds pop with sweet-sharp juice against thick yogurt and crunchy granola.

Seed a whole pomegranate at the weekend and you'll have enough for several breakfasts. Many shop-bought granolas use honey, so check the label, or make the puffed millet granola.

The original Princess Tofu blog published a pomegranate parfait recipe back in 2013, and food sites still link to it. This is our own fully vegan version, written from scratch.

Ingredient notes and swaps

Pick one that feels heavy for its size, with taut, unblemished skin.
How do you get the seeds out of a pomegranate?
Halve it across the middle, hold it cut side down over a bowl and tap the back firmly with a wooden spoon. The seeds fall out.
Can I make it the night before?
Layer the yogurt and fruit ahead, but add the granola just before eating so it stays crunchy.
