Puffed Millet Granola

Puffed millet makes granola that's light and crisp rather than dense, with tiny golden grains caught up in every cluster. It's sweetened with maple syrup instead of honey, so it's fully vegan.

Make a big batch at the weekend. It keeps for weeks in a jar and makes a quick breakfast with plant milk or yogurt, or a crunchy topping for fruit.

The original Princess Tofu blog published a puffed millet granola recipe back in 2012, and food sites still link to it. This is our own fully vegan version, written from scratch.

Ingredient notes and swaps

  • Puffed grains: puffed rice, quinoa or amaranth.
  • Oil: melted vegan butter or sunflower oil.
  • Sweetener: agave or date syrup instead of maple.

Tips for success

  • Don't stir while it cools if you want big clusters.
  • Watch it in the last 5 minutes; maple-sweetened granola burns quickly.

Variations

  • Chocolate: add 2 tbsp cocoa to the mix and chocolate chips once cool.
  • Tropical: coconut flakes and dried mango.

FAQ

Is granola usually vegan?
Not always. Many granolas use honey, and some add milk powder or yogurt coatings.
Why didn't my granola go crunchy?
It needs to cool completely. If it's still soft, bake it for a few more minutes.
Where do I find puffed millet?
In health food shops and larger supermarkets, near the puffed rice. Puffed rice or quinoa work instead.
Is it gluten-free?
Millet is gluten-free. Use oats labelled gluten-free if you need it to be.
How do I get big clusters?
Press the mixture down firmly before baking, and don't stir it while it cools.
